Indian: Raita (Cucumber Yogurt Sauce)

(makes about 2 cups)  

Ingredients:
- 1 cup plain yogurt 
 - 1 cup finely diced cucumber, seeds removed 
 - ½ cup green onions, finely diced (green parts only)
 - ¼ cup fresh cilantro, finely chopped
 - 2 teaspoons lemon juice
 - ½ teaspoon salt
 - Cayenne pepper for garnish (optional)
 
Procedure:
- Mix all ingredients; garnish with cayenne pepper (if desired)
 - Serve as a side dish with any well-spiced Indian dishes
